Ingredients for Kashmiri Rogan Josh:

  • 1.5 - 3 lbs beef chuck roast, cut into cubes
  • 1/2 cup plain yogurt
  • 1 tbsp grated fresh ginger
  • 1 tbsp minced garlic
  • 3 tbsp vegetable oil or ghee (clarified butter)
  • 2 large onions, finely chopped
  • 2 tbsp ground Kashmiri chili powder
  • 1 tbsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 tsp cayenne pepper (optional, for more heat)
  • 2 cups beef broth or water
  • 1 (14.5 oz) can diced tomatoes, undrained
  • Salt to taste
  • Fresh cilantro for garnish
