Ingredients:
- 2-3 lbs Tyner Pond Farm grass-fed beef (see variations below)
- 2 tbsp olive oil
- 1 large onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can tomato sauce
- 1 cup beef broth (or water)
- 1/2 cup green olives, sliced
- 2 bay leaves
- Salt and pepper to taste
Instructions:

Sear the beef: Season the beef generously with salt and pepper. Heat olive oil in a large Dutch oven or heavy-bottomed pot. Brown the beef on all sides in batches, then remove to a plate.

Sauté vegetables: Add onions and bell peppers to the pot, cooking until softened, about 5 minutes. Stir in garlic, cumin, oregano, and paprika, cooking for 30 seconds more.

Braise: Return beef and any juices to the pot. Add crushed tomatoes, tomato sauce, beef broth, olives, and bay leaves. Bring to a simmer, then reduce heat to low, cover, and cook for 2-3 hours, or until the beef is extremely tender and shreds easily.

Shred & Season: Remove the beef and shred with two forks. Discard bay leaves. Taste the sauce, adjusting salt, pepper, and spices as needed. Return shredded beef to the sauce.
