Recipe for Corn Chowder with Tyner Pond Bacon & Chicken Quarters:
One of my favorite winter meals is Chicken Corn Chowder, especially when it's made with the Tyner Pond Farm ingredients! This hearty soup combines tender, pasture-raised chicken from our farm with the natural sweetness of corn, potatoes and bacon. Corn Chowder is an Indiana tradition, and this recipe make it easy.
Here's a delicious recipe for Corn Chowder with Bacon & Pasture Raised Chicken Quarters:
Ingredients:
- 4 Tyner Pond Farm Chicken Leg Quarters (about 2 lbs), skin-on - 6 strips of Farm Bacon, chopped - 1 large onion, chopped - 2 cloves garlic, minced - 1 red bell pepper, diced - 4 cups canned or frozen corn kernels - 3 large potatoes, peeled and diced - 4 cups TPF chicken broth - 1 cup heavy cream - 1 teaspoon dried thyme - Salt and pepper to taste - Fresh parsley, chopped (for garnish)Instructions:
1. Cook the Bacon: In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot. 2. Brown the Chicken: Season the chicken with salt and pepper. In the same pot, brown the chicken legs and thighs on both sides. Remove and set aside. 3. Sauté the Vegetables: In the pot, add the onion, garlic, and red bell pepper. Sauté until the onion is translucent. 4. Add Potatoes and Broth: Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat to simmer. 5. Cook the Chicken: Return the chicken to the pot. Cover and simmer for about 30 minutes, or until the chicken is cooked through. (160 degrees) 6. Remove Chicken and Shred: Take the chicken out of the pot. Once cool enough to handle, shred the meat off the bones and discard the skin and bones. 7. Add Corn and Cream: Add the corn, heavy cream, and shredded chicken back into the pot. Stir in the thyme. Cook for another 10 minutes, or until the corn is tender. 8. Final Seasoning: Add the cooked bacon back to the pot. Season the chowder with salt and pepper to taste. 9. Serve: Ladle the chowder into bowls and garnish with chopped parsley. This hearty corn chowder is rich in flavors with the smokiness of bacon, the sweetness of corn, and the heartiness of chicken. It's perfect for a comforting meal on a chilly day. Enjoy your chowder!
