Tyner Pond Indiana Grassfed Beef Short Ribs Roasted on a plate

Easy Oven-Roasted Grassfed Short Ribs (Just Salt & Time)

Sometimes the best recipes are the simplest. When you start with high-quality beef, you don’t need a long list of ingredients or complicated steps. That’s especially true with our grassfed beef short ribs. With just coarse salt and a little time in the oven, you can turn this cut into a meal that’s rich, tender, and deeply satisfying.

While most short rib recipes call for braising with broth or wine, this method proves you don’t need anything extra. Slow roasting lets the natural fat render out, crisping the edges while keeping the inside juicy. The result is melt-in-your-mouth beef with a flavor that speaks for itself.

Simple Oven-Roasted Short Ribs Recipe

Ingredients:

  • 2–3 lbs beef short ribs (bone-in)

  • Coarse salt (kosher or sea salt)

Instructions:

  1. Preheat oven to 300°F. Line a baking sheet with parchment paper.

  2. Season ribs generously with salt on all sides. Let sit for 15–20 minutes.

  3. Place ribs bone-side down on the prepared baking sheet.

  4. Roast for 2.5–3 hours, until the meat is tender and beginning to pull away from the bone.

  5. Rest 10 minutes before serving. Optional: crisp the top under the broiler for 2–3 minutes before serving.

Why This Works

Grassfed beef short ribs are naturally rich and flavorful, with marbling that breaks down beautifully when roasted. By keeping the recipe simple, you let the quality of the beef shine. The rendered fat bastes the meat as it cooks, giving you tender ribs with crispy edges—all without extra steps or ingredients.

When to Make This Recipe

This isn’t a quick weeknight dinner—it’s a perfect weekend recipe when you want something hearty but hands-off. The oven does nearly all the work, giving you time to relax while the smell of roasting beef fills your kitchen.

Pair these ribs with roasted vegetables, mashed potatoes, or simply enjoy them on their own.
