Easy Low-Carb Chicken Nuggets Made with Pasture-Raised Ground Chicken

Sometimes the simplest meals are the best ones. These homemade chicken nuggets come together in minutes using our pasture-raised ground chicken, an egg, and a handful of ingredients you probably already have.

Most nugget recipes call for canned chicken or heavily processed breading. We wanted to share a version that keeps things clean and local. By starting with fresh ground chicken from birds raised outdoors on grass, you get better texture, better taste, and better nutrition—without the industrial fillers.

Why Ground Chicken from Pasture Matters

At Tyner Pond Farm, our chickens live on pasture and are moved to fresh grass daily. This system gives them constant access to insects, seeds, and green forage, producing meat that’s naturally higher in nutrients and lower in fat compared to confinement-raised poultry.

When you use ground chicken from pasture-raised birds, you’re not just cooking a better meal—you’re supporting a farming system that restores soil health, protects water, and keeps food production local.


Ground Chicken Nuggets Recipe

Ingredients

  • 1 lb pasture-raised ground chicken

  • 1 large egg

  • ½ cup shredded mozzarella

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt and pepper, to taste

  • Optional: ¼ cup finely ground pork rinds or almond flour for binding

Air Fryer Method

  1. Mix all ingredients in a medium bowl until well combined.

  2. Scoop about 2 tablespoons per nugget and shape into small patties.

  3. Place nuggets on parchment and lightly spray with oil.

  4. Air fry at 375°F for 14–16 minutes, flipping halfway, until they reach 165°F inside.

Oven Method

  1. Preheat oven to 400°F.

  2. Shape nuggets and place on a parchment-lined baking sheet.

  3. Spray tops with oil and bake 18–20 minutes, flipping halfway.

  4. Check for doneness (165°F internal temp). Serve hot with your favorite dipping sauce.

This recipe is quick enough for a weeknight and clean enough for any low-carb or keto plan. You can make a batch for meal prep, or serve them fresh with roasted vegetables or a big salad.
