Shepherd's Pie Recipe (Serves 6-8)

Ingredients:

  • 1.5 lbs grass-fed ground beef
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 3 medium carrots, peeled and diced
  • 2 stalks of celery, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons flour

  • 1 cup frozen peas
  • 1 cup frozen corn
  • Salt and pepper to taste
  • 4-5 large potatoes, peeled and cut into quarters
  • 1/4 cup milk
  • 4 tablespoons butter
  • 1 egg yolk
  • 1/4 cup grated cheddar cheese (optional)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat 1 tablespoon of oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Remove the beef from the skillet and set aside.
  3. In the same skillet, add another tablespoon of oil and sauté the onion, garlic, carrots, and celery until the vegetables are softened, about 5-7 minutes.
  4. Stir in the tomato paste, thyme, rosemary, and flour. Cook for 2-3 minutes.
  5. Gradually add the beef broth, stirring constantly until the mixture thickens.
  6. Add the cooked beef back into the skillet and mix in the frozen peas and corn. Season with salt and pepper to taste.
  7. Transfer the beef mixture to a 9x13 inch (23x33 cm) baking dish.
  8. In a large pot, boil the potatoes until they are tender. Drain and mash the potatoes with the milk, butter, egg yolk, and salt and pepper to taste.
  9. Spoon the mashed potatoes over the beef mixture, spreading it evenly.
  10. Sprinkle grated cheddar cheese on top (optional).
