Here is the recipe for a traditional pasta casserole using local grassfed beef:
Ingredients:
- 1 lb grassfed ground beef
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 2 large carrots, peeled and chopped
- 2 stalks of celery, chopped
- 1 cup of sliced mushrooms
- 1 cup of beef broth
- 1 can of diced tomatoes
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried basil
- Salt and pepper, to taste
- 8 oz of dried pasta, such as ziti or penne
- 2 tbsp olive oil
- 1 cup of grated mozzarella cheese
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the onion and cook until softened and translucent, about 5 minutes.
- Add the garlic, carrots, and celery to the skillet and cook for another 5 minutes, until the vegetables are tender.
- Add the grassfed ground beef to the skillet and cook until browned, about 10 minutes. Drain any excess fat.
- Add the mushrooms, beef broth, diced tomatoes, tomato paste, thyme, rosemary, basil, salt, and pepper to the skillet. Stir to combine.
- Cook the pasta in a large pot of boiling salted water until al dente, about 8-10 minutes. Drain and set aside.
- Mix the cooked pasta with the beef mixture in the skillet.
- Transfer the mixture to a 9x13 inch baking dish and sprinkle the mozzarella cheese on top.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, until the cheese is melted and bubbly.
