Meet Smoking Goose in Indianapolis
When you shop with Tyner Pond Farm, you’ll find the beef and chicken we raise, along with food from a few other producers we’ve chosen to work with. I want those names to be familiar to you, too.
Smoking Goose is one of them. They make cured meats, smoked meats, salumi, and sausages in Indianapolis. You can find a selection of their products on our website and include them in your regular farm order.
I’ve known Chris Eley of Smoking Goose for more than a decade. Knowing the people behind our food matters to me. So does being clear about whose work you’re buying. The Smoking Goose products we carry are made by their team in Indianapolis. We offer them alongside the food from our small diversified farm.
Good local food takes more than a farmer
Raising animals is one part of getting good food to your table. There’s also the work of the butcher, the person developing a cure, and the people doing the smoking, slicing, and packing. Those skills deserve some attention.
Smoking Goose describes its approach as old-world craft with new-world flavor. Their range gives you a sense of what that means: familiar bacon, traditional salame styles, and other cured meats with their own combinations of seasonings.
They also describe working with small family farms in Indiana and neighboring states. Those regional relationships are part of their story. We can tell you where the food is made and who makes it, while being clear that the farms behind individual products can vary.
That’s how I want us to talk about local food. Give people the names, tell them what the food is, and make it easy to decide whether it belongs in their next order.
A few places to start
If you’re familiar with their Applewood Smoked Bacon, you already know one part of the Smoking Goose range. It’s pork-belly bacon made with Indiana maple syrup and smoked over applewood. We offer the 12-ounce sliced package.
For a cured meat you can serve without cooking, Salame Piccante comes in a 3-ounce sliced package. It’s made with pork, paprika piccante, red wine, anise, and garlic.
Lomo is another option. It’s a Spanish-style cured pork loin, seasoned with garlic, paprika, and black peppercorns. Our 3-ounce package is already sliced and ready to serve.
You don’t have to put together an elaborate board to try any of this. Choose one product that sounds good to you. A small package of sliced salame can be part of lunch. Bacon can go into the breakfast you were already planning. Read each product’s label for its ingredients, storage directions, and whether it needs cooking.
Make it part of the shopping you already do
I want buying from us to fit ordinary life. You can order the beef or chicken you need and add a Smoking Goose product you’d like to try. An ordinary order is a good place to start.
