Instant Pot Grass-Fed Beef Bone Stock: A Rich and Flavorful Recipe

Ingredients:

  • 4 lbs grass-fed beef bones (neck bones, marrow bones, or a mixture)
  • 2 onions, roughly chopped
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 2 cloves of garlic, smashed
  • 2 tablespoons of apple cider vinegar
  • 1 teaspoon of black peppercorns
  • 1 teaspoon of salt (optional)
  • water

Instructions:

  1. Preheat the Instant Pot on the "Sauté" setting. Add the beef bones and brown them for about 5-7 minutes on each side.
  2. Once the bones are browned, remove them from the Instant Pot and set them aside.
  3. Add the onions, carrots, celery, and garlic to the Instant Pot and sauté for about 5 minutes, or until they are slightly softened.
  4. Return the beef bones to the Instant Pot and add the apple cider vinegar, black peppercorns, and salt (if using).
  5. Add enough filtered water to the Instant Pot to cover the bones and vegetables by about an inch.
  6. Close the Instant Pot lid, set the valve to "sealing," and press the "Manual" button. Set the timer for 120 minutes at high pressure.
Once the cooking time is complete, allow the pressure to release naturally for at least 20 minutes before carefully opening the valve to release any remaining pressure. Once the pressure has been released, carefully remove the grassfed beef bones and vegetables from the Instant Pot. Strain the liquid through a fine-mesh strainer or cheesecloth and discard the solids. Allow the stock to cool to room temperature before storing it in an airtight container in the refrigerator for up to 5 days, or in the freezer for up to 6 months.
