Chicken Orzo Soup Recipe (with a Keto Option)

In the winter, I like meals that are straightforward and don’t take much thought. Chicken soup is usually one of the first things I make.

Many people think homemade soup requires a lot of work, but it’s one of the easiest ways to feed a family without much cost or stress. When the base of the soup is pasture-raised chicken, the nutrition is built in. The vegetables, broth, and a small amount of lemon bring everything together in a straightforward way.

Some people prefer a lower-carb approach. If that’s the case, the traditional orzo can be swapped for keto-friendly orzo without changing the structure of the recipe.


Ingredients

  • 2 tablespoons olive oil

  • 1 large onion, diced

  • 3 carrots, chopped

  • 3 celery stalks, chopped

  • 3 garlic cloves, minced

  • 1½ pounds pulled or diced cooked chicken

  • 8 cups chicken broth

  • 1 cup traditional orzo or keto-friendly orzo

  • 2 teaspoons dried Italian seasoning

  • 1 lemon, juiced

  • 2 tablespoons fresh parsley, chopped

  • Salt and pepper to taste


Instructions

  1. Warm the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Cook for about 5 minutes, until the vegetables begin to soften.

  2. Add the garlic and cook for one more minute.

  3. Add the chicken and let it heat through for 5–7 minutes.

  4. Pour in the chicken broth. Bring it to a boil, then reduce the heat and let the pot simmer for 15 minutes.

  5. Stir in the orzo and Italian seasoning. Simmer for about 10 minutes, or until the orzo is tender.

  6. Add the lemon juice and parsley. Taste and season with salt and pepper.

  7. Serve warm.
