Our Take on Choripan: A Farm-Inspired Burger with Chorizo

On our farm, grilling burgers is a weekly ritual, especially when it comes to smashburgers—Amy and I enjoy them a few times each week. But sometimes, it’s nice to change things up and bring in flavors that connect us to traditions around the world. That’s where Choripan comes in, a simple and beloved sandwich from Argentina.

What is Choripan?

Choripan, an iconic sandwich of South America, takes its name from chorizo (sausage) and pan (bread).
It was born from the practical needs of farmers, ranchers, and gauchos—Argentina's legendary cattlemen—who worked long hours and needed affordable, nourishing food. The idea was simple: grill a seasoned chorizo sausage, place it in fresh bread, and top it with chimichurri sauce for an easy, satisfying meal. This rustic, no-fuss sandwich has grown into a cultural staple served at open-fire asados (barbecues), street fairs, and family gatherings. Choripan was created to solve a problem that farmers everywhere face: how to feed hardworking people with accessible, flavorful ingredients. Here in Indiana, we're drawn to the same values. Our Pasture-Raised Spin: The Choripan Burger

Inspired by Choripán’s simple roots, we’ve created our own version using our pasture-raised ground pork chorizo. This Choripán burger brings the essence of Choripán together with the satisfaction of a traditional burger, giving us a delicious way to enjoy our chorizo while adding a bit of variety to our weekly grill routine.

Recipe: Tyner Pond Farm’s Choripan Burger

Ingredients

  • Tyner Pond Farm pasture-raised ground pork chorizo
  • Crusty rolls or burger buns
  • Homemade chimichurri sauce (recipe below)
  • Optional: sliced tomatoes and lettuce

Instructions

  1. Form the Patties: Shape the ground chorizo into burger-sized patties.
  2. Grill the Patties: Place them on a hot grill, cooking them until fully done.
  3. Assemble the Burger: Place each patty on a warm roll, topping it with a generous spoonful of chimichurri. Add sliced tomatoes or lettuce if desired.
  4. Serve Hot: Enjoy the burgers fresh off the grill for the best experience.

Chimichurri Sauce Recipe

Ingredients

  • 1 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped (optional)
  • 3-4 cloves garlic, minced
  • 2 tablespoons red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (to taste)
  • Salt and black pepper to taste

Instructions

  1. Combine Ingredients: In a bowl, mix parsley, cilantro (if using), garlic, red wine vinegar, oregano, and red pepper flakes.
  2. Add Olive Oil: Stir in the olive oil until well blended.
  3. Season: Add salt and pepper to taste, adjusting the vinegar or pepper flakes as desired.
  4. Let it Rest: Let the sauce sit for 15-20 minutes before serving to allow the flavors to come together.
