Easy & Quick Pulled Pork Fried Rice

Ingredients:

  • 2 cups cooked Tyner Pond Farm Pulled Pork, (canned or frozen)  warmed through
  • 3 cups cooked rice (day-old rice works best)
  • 3 tablespoons vegetable oil
  • 1 small onion, diced
  • 1 cup frozen peas & carrots mix
  • 2-3 large eggs
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil (optional, for extra flavor)
  • Salt and black pepper to taste

Instructions:

  1. Prep: In a small bowl, whisk together the soy sauce and sesame oil (if using).
  2. Sauté Veggies: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Sauté the diced onion until softened, then add the frozen peas and carrots. Cook until warmed through.
  3. Add Pulled Pork & Rice: Add the remaining 2 tablespoons of oil to the pan. Stir in the leftover pulled pork and the cooked rice. Fry, stirring occasionally, until the rice is heated through and slightly crispy.
  4. Make a Well: Push the fried rice and pork mixture to the sides of the pan, creating a space in the center.
  5. Scramble the Eggs: Pour the beaten eggs into the center of the pan and let them begin to set slightly. Then, scramble them and quickly mix them into the fried rice and vegetables.
  6. Finish & Serve: Drizzle with soy sauce mixture, season with salt and pepper, then toss to combine. Serve hot!
