Expert Tips for Cooking the Perfect Filet Mignon

The perfect Filet Mignon Recipe begins with outstanding beef...best when Grassfed and sourced locally. Grassfed Beef cooks differently than feedlot beef. I personally like to dry brine for at least 4 hours and up to a day in advance. I Dry Brine is simply a generous coat of salt all over the Filet Mignon and putting in a ziplock in the refrigerator for several hours, up to 24 hours.

What is the Point of Dry Brining A Grassfed Steak?

Over time, a dry brine will pull moisture into the steak, locking it in while drying the steak surface. The dry surface will create a great crust while the interior will be moist and tender.

Ingredients:

4 filet mignon steaks, about 1 inch thick 8 slices of bacon 1 tablespoon olive oil Salt and pepper 2 tablespoons butter 2 cloves garlic, minced 2 sprigs fresh thyme

Instructions:

Preheat your oven to 400 degrees Fahrenheit. Wrap each filet mignon with two slices of bacon, securing the bacon with toothpicks. Heat a large oven-safe skillet over medium-high heat. Add the olive oil and heat until it shimmers. Season the filets with salt and pepper on both sides. Place the filets in the skillet and sear for 2-3 minutes on each side, until they are nicely browned. Transfer the skillet to the preheated oven and roast for 8-10 minutes, or until the filets reach your desired level of doneness. use a thermometer and temp below what you think t should be. It will continue to cook while it rests and a bit more in the finishing stage. I shoot for 140 degrees. Remove the filets from the skillet and set them aside to rest. In the same skillet, melt the butter over medium heat. Add the minced garlic and thyme and cook for 1-2 minutes, until fragrant. Return the filets to the skillet and baste them with the garlic butter sauce. Serve the filets immediately, garnished with any remaining garlic butter sauce and a sprinkle of fresh thyme. Enjoy!
