Two Ways to Cook Tri-Tip Perfectly

Because grass-fed beef is lean, it cooks faster than factory-farmed beef. You want to avoid overcooking it. We recommend aiming for a perfect medium-rare (around 130–135°F internal temperature).

1. The Indirect Heat Grill Method

Whether you use a gas grill or a charcoal grill, using indirect heat is the absolute best way to ensure your grass-fed beef stays juicy.
  • Prep: Take the roast out of the fridge 30 minutes before cooking. Rub it generously with coarse salt, cracked black pepper, and garlic powder.
  • Setup: Heat up your grill but keep a cool zone. On a gas grill, turn on the burners on one side and leave the other burners off. On a charcoal grill, push all the hot coals to one side.
  • Cook: Place your tri-tip on the cooler side of the grill (indirect heat). Close the lid and let it slow-cook until it reaches about 120°F in the thickest part.
  • Sear: Move the roast directly over the hot flames for 2 to 3 minutes per side to get a crisp, beautiful crust.

2. The Skillet-to-Oven Method

Great for rainy Indiana days when you want to stay in the kitchen.
  • Sear: Heat a heavy cast-iron skillet over high heat with a splash of oil or a dollop of our Grass Fed Beef Tallow. Sear the tri-tip for 3 minutes on each side until deeply browned.
  • Bake: Move the entire skillet into an oven preheated to 350°F.
  • Check: Roast for about 15 to 20 minutes. Use a digital meat thermometer to pull it out exactly when it hits 130°F.
  • Rest: 10-15 minutes

The Golden Rule: Slicing Against the Grain

The absolute most important step happens after the meat cooks. If you slice a tri-tip incorrectly, it will feel tough to chew. If you slice it right, it will melt in your mouth.
  1. Rest the meat: Let the roast sit on a cutting board for 10 to 15 minutes before touching it. This locks in the juices.
  2. Find the turn: Look closely at the raw or cooked meat. A tri-tip actually has two different grain directions. The muscle lines meet right in the middle.
  3. Split and slice: Cut the triangle completely in half right where those two grain patterns meet. Then, take each piece and slice it into thin strips across the lines, not with them.
