Last night, my chef friend Jack Leininger made this simple keto dinner using our pasture-raised chicken breasts.

Chicken breast can sometimes be difficult to cook well because it is naturally lean. Jack’s answer was to cook the breasts in butter, then finish them with a creamy garlic pan sauce made from homemade chicken broth, heavy cream, raw milk cheese, thyme, and the browned bits left in the skillet.

The result was tender chicken with plenty of moisture and flavor, without breading, flour, seed oils, or a packaged soup base.

Each serving provides approximately 49 grams of protein and just 4 grams of net carbohydrates, making this an easy meal to work into a keto or lower-carbohydrate diet. The full recipe serves four and takes about 12 minutes to prepare and 25 minutes to cook.

Why This Chicken Recipe Works

Boneless chicken breasts cook quickly, but their uneven shape can create problems. The thin end may dry out before the thickest part is fully cooked.

For this recipe, Jack pounds the breasts to an even thickness of about three-quarters of an inch before seasoning them with salt, black pepper, and thyme. That small step helps the chicken cook more evenly and makes the finished meal much more dependable.

After the chicken is browned in butter, it is removed from the skillet while the sauce is prepared. Garlic is briefly cooked in the remaining butter, followed by homemade chicken broth, which loosens the browned bits from the pan.

Heavy cream and grated raw milk cheese turn those pan drippings into a rich sauce that coats the chicken without needing flour or cornstarch.

Ingredients

  • 4 boneless pasture-raised chicken breasts, about 8 ounces each
  • 2 tablespoons butter
  • 4 garlic cloves, minced
  • ¾ cup homemade chicken broth
  • ½ cup heavy cream
  • ⅓ cup grated raw milk cheese
  • 1 teaspoon dried thyme
  • Sea salt
  • Black pepper

Instructions

If the chicken breasts are especially thick, gently pound them to an even thickness of about three-quarters of an inch. Season both sides with sea salt, black pepper, and thyme.

Melt the butter in a skillet over medium heat. Add the chicken and cook for approximately five to seven minutes per side, until the thickest portion reaches 165°F. Transfer the cooked chicken to a plate.

Reduce the heat and add the minced garlic. Cook for about 30 seconds, just until fragrant.

Pour in the homemade chicken broth and use a wooden spoon to loosen the browned bits from the bottom of the skillet. Add the heavy cream and allow the sauce to simmer gently until it begins to thicken.

Stir in the grated cheese. Return the chicken to the skillet and spoon the creamy garlic sauce over the top before serving.

The most important step is not following an exact cooking time. It is checking the thickest part of each breast with a meat thermometer.

It begins with chicken, butter, garlic, broth, cream, cheese, and thyme. Nearly everything cooks in one skillet, and the sauce is made while the chicken rests.
