Garlic Butter Keto Pork Chops

This recipe is straightforward: pan-seared pork chops finished in a garlic butter sauce. No shortcuts, no unnecessary extras. Just real food cooked in a way that works on a weeknight and supports the kind of farming system we believe in.

Ingredients:

  • 4 boneless pork chops (about 1 inch thick)

  • 2 tbsp olive oil or avocado oil

  • 2 tbsp butter

  • 3 cloves garlic, minced

  • ½ cup chicken broth (unsalted)

  • ½ cup heavy cream

  • ½ cup grated parmesan cheese

  • 1 tsp dried thyme (or 1 tbsp fresh)

  • 1 tsp dried rosemary (or 1 tbsp fresh)

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (for garnish)

 


 

Instructions:

  1. Prepare pork chops
    Pat the pork chops dry with a paper towel. Season generously on both sides with salt and pepper.

  2. Sear the chops
    Heat olive oil in a large skillet over medium-high heat. Add pork chops and sear 3–4 minutes per side, until golden brown. Remove from skillet and set aside.

  3. Make garlic butter sauce
    In the same skillet, reduce heat to medium. Add butter and garlic, sauté for 1 minute until fragrant.

  4. Build the sauce
    Stir in chicken broth, scraping up any browned bits from the pan. Add heavy cream, parmesan, thyme, and rosemary. Simmer for 3–4 minutes, stirring, until slightly thickened.

  5. Finish cooking
    Return pork chops to skillet. Spoon sauce over the top and let simmer 5–7 minutes, or until pork chops reach 145°F internal temperature.

  6. Serve
    Garnish with chopped parsley and serve with a keto-friendly side like sautéed spinach, roasted broccoli, or cauliflower mash.

This cheesy cauliflower rice is a simple side that adds richness without relying on potatoes or grains. Cheesy Cauliflower Rice (Keto-Friendly Side)

Cook time: 15 minutes

Ingredients:

  • 3 tablespoons salted butter

  • 1 yellow onion, diced

  • 4 cups cauliflower rice (fresh or frozen)

  • ½ cup heavy whipping cream

  • 1 cup shredded cheddar cheese

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt, to taste

  • Freshly ground black pepper, to taste

 


 

Instructions:

  1. In a large skillet over medium heat, melt the butter. Add the onion and cook, stirring often, until translucent (3–5 minutes).

  2. Add the cauliflower rice and continue cooking for another 5 minutes, stirring occasionally.

  3. Stir in the cream, cheddar cheese, garlic powder, and onion powder. Season with salt and pepper. Cook until the cheese is melted and the mixture is creamy, about 3 minutes.

  4. Serve hot.
