Why I Started Eating Keto at 64
I began eating a low-carbohydrate diet on August 19, 2024, when I was 64 years old.
I had already been through cancer. I was carrying more weight than I should, my joints hurt, and I had begun accepting that feeling worse was simply part of getting older.
I decided to test that assumption.
I removed seed oils, added sugar, and most ultra-processed food. My meals became fairly simple: beef, eggs, chicken, fish, salads, homemade stock, butter, tallow, olive oil, and modest amounts of non-starchy vegetables.
At the same time, I began moving again. I started by walking, then rucking, and eventually running. Because both my food and activity changed, I cannot honestly credit every result to the keto diet alone.
Still, the overall change has been meaningful. My weight came down, my joints felt better, and my energy became more consistent. My triglycerides fell from 194 to 98, my CRP dropped from 1.38 to 0.518, and my fasting insulin measured 1.67.
My LDL also increased. That is why I have tried to look at the complete picture instead of selecting only the numbers that support what I want to believe. I published the details in my article about what happened to my bloodwork after changing how I ate.
These are my results, not a promise about what will happen to someone else. I share them because personal experience is more useful when it includes actual measurements.
Why I Made a Whole-Food Keto Cookbook
The food industry can turn almost any useful idea into another category of processed food. Keto has been no exception.
Store shelves now contain keto bars, keto cereal, keto bread, keto desserts, and long lists of ingredients intended to imitate the foods people are trying to stop eating.
I chose a simpler approach.
Most of my meals begin with a recognizable source of protein. I add eggs, cheese, cream, a salad, or a low-carbohydrate vegetable when it makes sense. I cook with butter, beef tallow, bacon fat, or olive oil rather than industrial seed oils.
This does not require complicated keto diet recipes. It requires having dependable food in the freezer and knowing a few good ways to prepare it.
These are not special meals made only for people on a diet. They are practical meals made from ordinary food.
How I Build a Simple Keto Diet Plan
My keto diet plan is not a rigid schedule. It is a basic framework that makes it easier to shop, cook, and use what I already have.
I begin with protein. That may be ground beef, steak, roast chicken, eggs, pork, or salmon. I then add a salad, mushrooms, broccoli, cauliflower, cheese, cream, or another simple ingredient when it fits the meal.
I normally choose only a few main proteins for the week. For example, I might cook ground beef, a whole chicken, and a chuck roast. Eggs, bacon, sardines, and salmon give me a few additional choices without requiring a completely different plan for every meal.
I also cook enough for leftovers. Extra steak can become breakfast with eggs. Leftover chicken can go over a salad. A chuck roast can provide dinner one night and lunch for several days.
Finally, I keep dependable foods available for busy days. Ground beef, eggs, hamburger patties, chicken leg quarters, and frozen salmon are all easier than trying to create a complicated meal when I am already hungry.
That is the basic keto diet plan I follow:

- Cook enough to make the following day easier.
- Keep a few quick meals available in the freezer.
- Repeat foods instead of expecting every meal to be new.

Ground beef is one of the most useful foods in my kitchen. It is easy to portion, quick to cook, and usually more economical than steak.
A pound of ground beef can become burger patties, meatballs, taco bowls, skillet meals, meatloaf, or a simple beef-and-egg breakfast. Leftovers can go into an omelet or over a salad the following day.
Several of the keto ground beef recipes in the cookbook are made in one skillet. That matters during an ordinary week. A way of eating becomes easier to maintain when dinner does not require a long ingredient list or a sink full of dishes.

One sheet-pan recipe combines chicken with broccoli and cauliflower. Another uses bone-in chicken so the skin and rendered fat remain part of the meal.
I generally prefer straightforward preparations that allow chicken to remain chicken. Our pasture-raised chicken is moved across grass daily, and we do not inject it with broth or added sodium during processing.
When the starting ingredient is good, it usually does not need to be covered up.
Keto Steak and Beef Recipes
Keto steak recipes do not need to be elaborate.
A steak cooked in cast iron with salt and butter, then given time to rest, is already a dependable meal. Add eggs for breakfast, mushrooms and cream for dinner, or a plain salad with homemade dressing.
The cookbook also makes use of roasts and other beef cuts. These recipes take longer to cook, but most of that time is unattended. A chuck roast prepared once can provide several meals without feeling like the same dinner every night.
I do not think of this as formal meal preparation. I simply cook enough good food to make tomorrow easier.

I eat fish regularly, so salmon needed its own place in the cookbook.
One of my favorite recipes is salmon cakes. Finely crushed pork rinds help bind the salmon mixture, while egg and coarser pork-rind crumbs form the outside coating. This gives the cakes structure and a crisp surface without flour or breadcrumbs.
The salmon section also includes simpler preparations for nights when there is no reason to do more than season a fillet and cook it properly.
Fish does not replace beef or chicken in my diet. I think of it as a useful addition that brings different nutrients to the table.

Meat may be at the center of most of my meals, but it is not the entire cookbook.

For breakfast, I might have eggs with leftover steak or a ground beef and egg skillet.
Lunch may be leftover chicken, a hamburger patty over a salad, sardines, or part of the previous night’s roast.
Dinner could be sheet-pan chicken with broccoli and cauliflower, a cast-iron steak with mushrooms, salmon cakes, meatballs without breadcrumbs, or slow-cooked chuck roast.
These are the kinds of keto meal ideas that work for me because they do not require unusual ingredients or much advance preparation.
I do not try to make every meal new or interesting. A few dependable recipes, repeated in different combinations, are more useful than an elaborate plan that is difficult to follow.
I Measure My Results Instead of Assuming
I use a Keto-Mojo meter to measure blood ketones and glucose nearly every day.
The readings help me see how I respond to particular meals, ingredients, sleep, exercise, and alcohol. If my ketones are 1.2 mmol/L before a meal and 0.7 the following morning after two glasses of dry wine, that is useful information.
I do not treat one reading as a final judgment. Ketone levels move continuously, and food is not the only thing that affects them. Exercise, fasting time, sleep, alcohol, and the time of day can all change a reading.
The meter simply gives me another piece of information. That is more useful to me than assuming a packaged food is right for my body because its manufacturer placed the word “keto” on the label.
The Food Still Matters
