
Chicken Thigh Recipe – It’s Time To Rethink Pastured Chicken

My personal favorite everyday cut of our pasture raised chicken are the thighs. They are easy to prepare and delicious.
Recipe for Pasture Raised Chicken Thighs
Ingredients:
- 8 pasture-raised chicken thighs
- Salt and pepper
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/4 cup white wine or chicken broth
- 1 lemon, juiced
Instructions:
Preheat the oven to 400 degrees F.
Season the chicken thighs with salt and pepper.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs, skin-side down, and cook until the skin is golden brown, about 5 minutes.
Flip the chicken thighs and add the garlic, thyme, and rosemary. Cook for 1-2 minutes until fragrant.
Deglaze the pan with the white wine or chicken broth and cook until the liquid is reduced by half.
Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through.
Remove the skillet from the oven and squeeze the lemon juice over the chicken.
Let rest for 5 minutes before serving.
