Grass-Fed Beef Nutrition Begins in the Pasture

Grass-fed beef nutrition begins long before processing. New research shows how soil health, pasture diversity and grazing management can influence the nutrients found in beef.

We usually describe beef according to what the animal was fed. Was it grass-fed or grain-fed? Was it finished on pasture or in a feedlot?

Those are important questions, but they do not tell the whole story.

A growing body of research suggests that the nutritional composition of beef begins much earlier. It begins with the soil, the plants growing in that soil, and the way cattle are managed across the land.

Following Nutrition From the Soil to the Beef

A 2025 study published in npj Science of Food examined the connection between soil, pasture, cattle, and beef.

The researchers compared three grass-finishing systems in the southern United States with a grain-finishing system. They collected samples from the soil, the plants the cattle were eating, and the beef itself.

The pasture soils contained more organic matter and higher levels of several important minerals than the cropland soils used to produce feed.

The differences became much larger when the researchers examined the plants. Pasture forage contained more than 100 times the phytochemical content of the grain-based feed ration.

Some of those differences carried through to the beef.

Compared with grain-fed beef, the grass-fed beef contained:

  • 3.1 times more phytochemical antioxidants
  • 2.9 times more vitamin A
  • 4.2 times more vitamin E
  • Higher levels of several omega-3 fatty acids
  • Higher levels of compounds such as ergothioneine

Ergothioneine is an antioxidant produced by fungi and soil microorganisms. Animals cannot make it themselves. They obtain it through what they eat.

That makes this more than a simple comparison between grass and grain. It begins to show how compounds originating in a living pasture can eventually appear in the food produced from that pasture.

The Pasture Still Matters Within Grass-Fed Beef

A larger 2026 study in the Journal of Animal Science adds another important part to the story.

Researchers analyzed 337 ribeye samples from commercial North American beef operations. Of those, 253 were grass-fed and 84 were grain-fed.

On average, the grass-fed beef contained more omega-3 fatty acids, CLA, iron, calcium, copper, and selenium. Its average omega-6-to-omega-3 ratio was 2.14, compared with 8.28 for grain-fed beef.

However, there was considerable variation among the grass-fed samples.

The omega-6-to-omega-3 ratios ranged from 0.62 to 11.45. Some grass-fed samples had strong omega-3 profiles, while others were much closer to grain-fed beef.

The researchers found that cattle finished on diverse pastures tended to have better omega balances. Rotational grazing and access to fresh, growing forage also appeared to matter.

Grass-Fed Is a Starting Point

The important lesson is not simply that grass-fed beef performed better than grain-fed beef.

Many of our customers have already made that choice.

The more difficult question is what separates one grass-fed beef operation from another.

“Grass-fed” is becoming another large grocery-store category. Beef carrying that label can now be gathered from many farms, regions, climates, and even countries before being sold under one brand.

The label may tell you something about what the cattle did not eat. It tells you much less about the pasture they did eat.

It does not tell you whether the pasture contained several plant species or one dominant grass. It does not tell you whether the cattle grazed living forage or spent much of the finishing period eating stored hay. It does not tell you how frequently the animals moved or how much recovery time the land received.

Those details are harder to place on a package, but the research suggests they matter.

What This Means at Tyner Pond Farm

At Tyner Pond Farm, our goal has never been merely to avoid feeding grain.

Our cattle move regularly to fresh pasture. After they leave a paddock, we give the plants time to recover before the cattle return. That rest helps maintain living roots, covered soil, and a mixture of grasses, legumes, and broadleaf plants.

We also finish our cattle during the growing season, when our central Indiana pastures can provide fresh forage. The cattle are allowed to select from the plants available rather than being given a uniform formulated ration.

We do not claim that every serving of Tyner Pond beef contains the exact nutrient levels reported in these studies. We have not conducted this kind of laboratory testing on our own beef.

What we can tell you is exactly how the cattle are raised, what they eat, where they live, and how we manage the pasture beneath them.

That is the value of knowing the farm behind your food.

Better Questions About Grass-Fed Beef

If nutrition is one reason you buy grass-fed beef, it is worth asking more than whether the label says “grass-fed.”

Ask:

  • Is the beef 100% grass-fed and grass-finished?
  • What do the cattle eat during the final months before processing?
  • Are they grazing fresh pasture or primarily eating stored forage?
  • Does the pasture contain a mixture of plants?
  • Are the cattle moved and the pasture allowed to recover?
  • Where was the animal raised?
  • Can you speak directly with the farmer?

These questions will not provide a laboratory analysis. They will tell you whether the label is connected to an actual place and an accountable farming system.

Good Food Begins With a Place

Neither of these studies should be treated as the final word. The soil-to-beef study examined a limited number of farms, and neither study proves that eating grass-fed beef will produce a particular health outcome in people.

What they do show is that beef does not have one fixed nutritional composition. The way cattle are raised can change the food they produce.

Soil affects plants. Plants feed animals. Farmers manage the relationships between them.

That is why we believe grass-fed beef should not become another anonymous commodity. Good food begins with a place, and it should come from somebody you can know.
