Full Description

Smoking Goose Capocollo di Dorman is a pork collar salame made in Indianapolis with paprika, white wine, crushed red pepper, black pepper, coriander, and juniper berries.

This is a cured pork product with gentle heat and a firm but tender texture when sliced. Smoking Goose makes it at their Indianapolis meatery on Dorman Street, which is where the name comes from. Dorman Street was named after the grandson of Indiana’s fourth governor.

We are offering Capocollo di Dorman through Tyner Pond Farm because Smoking Goose’s sourcing and approach to meat fit the kind of local food system we believe in. Chris Eley and I have known each other for more than a decade, and their work reflects the kind of farm relationships and careful meat processing we are comfortable standing behind.

This product is made by Smoking Goose, not by Tyner Pond Farm. We offer it because it gives our customers access to Indiana-made charcuterie from people we know and trust.

Capocollo di Dorman works well on a charcuterie board, in sandwiches, or as a simple first course. Its mild heat pairs well with pickled vegetables, fruit preserves, fresh mozzarella, ripe tomatoes, roasted red peppers, and olive oil.

  • Highly Recommend!

I ordered different types of meat and cuts from Tyner Pond Farm. Everything was packaged well. Tonight we had the boneless pork chops for dinner. They were very tender and delicious! My husband commented on how good they were. I would highly recomend purchasing your meats from Tyner Pond Farm.

  • Best Quality I've Tried!

I order all of my ground beef from this place and love it! You can tell the quality is way better than the stuff at the store. It’s a different natural color, never smells bad, always cooks just right and no liquid in the pan, and I’ve kept it in my fridge for a month or more and it still tasted perfect.
