A tender steak portion cut to fit the meal you actually want to eat.
Our Flat Iron Steak is offered in a range of butcher-cut portion sizes, from 3 ounces to 10+ ounces. The idea is not that every customer needs a “full steak.” It is the same steak, simply offered in different portion sizes.
Flat Iron is one of the more tender cuts we produce. It has enough marbling to stay flavorful, but it remains practical and easy to cook. Whether you want a smaller protein-first meal or a more traditional steak portion, this cut gives you options.
The smaller portions can be especially useful for people using GLP-1 medications, older customers, one-person households, or anyone who simply wants to start with a more appropriate amount of food. The larger portions work well for customers who want the same steak in a more substantial serving.

Our Flat Iron Steaks come from cattle raised by Tyner Pond Farm on pasture in central Indiana. The beef is 100% grass-fed and grass-finished, with no grain, antibiotics, or added hormones.
Nothing is injected, marinated, or added. There are no seed oils, fillers, or sauces. It is simply beef from a known source.

Thaw the steak completely in the refrigerator and pat it dry. Season simply with salt.
Cook it in a hot skillet or on a hot grill. Sear both sides well, then continue cooking just until the steak reaches your preferred doneness. Flat Iron is best cooked to rare or medium rather than well done.
Because these portions vary in size, cooking time will depend more on thickness than weight. The smaller portions may need only a few minutes total, while the larger cuts may need more time after the initial sear.
Let the steak rest for about five minutes before slicing. Slice across the grain for the best texture.

If you’re not fully satisfied with your Tyner Pond Farm products for a valid reason, please contact amber@farmersmarket.com or call (317) 477-7940 within 7 days of receipt. Inspect your meat upon delivery and report any issues with packaging or cuts to receive a replacement.
We’ll review your concern and provide a resolution, which may include replacing the product or issuing a partial/full refund. Since we can’t physically inspect the product, we may request photos of the label and reported damage.
Refunds will be issued to the original payment method.
