Tyner Pond Farm’s Ropa Vieja
At Tyner Pond Farm, we’re passionate about bringing wholesome, delicious food to your table. This Ropa Vieja recipe highlights our commitment to quality 100% Grassfed Beef – the perfect way to gather your loved ones for a cozy, satisfying meal with a touch of Cuban heritage.
Ingredients:
- 2-3 lbs Tyner Pond Farm grass-fed beef (see variations below)
- 2 tbsp olive oil
- 1 large onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can tomato sauce
- 1 cup beef broth (or water)
- 1/2 cup green olives, sliced
- 2 bay leaves
- Salt and pepper to taste
Instructions:
- Sear the beef: Season the beef generously with salt and pepper. Heat olive oil in a large Dutch oven or heavy-bottomed pot. Brown the beef on all sides in batches, then remove to a plate.
- Sauté vegetables: Add onions and bell peppers to the pot, cooking until softened, about 5 minutes. Stir in garlic, cumin, oregano, and paprika, cooking for 30 seconds more.
- Braise: Return beef and any juices to the pot. Add crushed tomatoes, tomato sauce, beef broth, olives, and bay leaves. Bring to a simmer, then reduce heat to low, cover, and cook for 2-3 hours, or until the beef is extremely tender and shreds easily.
- Shred & Season: Remove the beef and shred with two forks. Discard bay leaves. Taste the sauce, adjusting salt, pepper, and spices as needed. Return shredded beef to the sauce.
- Serve: Enjoy your Ropa Vieja with white rice, black beans, and fried plantains for a classic Cuban meal.
Grass-fed Beef Variations:
Chuck Roast: Incredibly flavorful and perfect for shredding.
Brisket: Another classic for braising; offers rich flavor and melts in your mouth.
Short Ribs: Extra tender, but make sure they’re boneless for easy shredding.
Mix & Match: Combine different cuts for interesting texture and flavor combinations.
Tips:
Slow Cooker Option: Brown the beef and sauté vegetables, then add all ingredients to the slow cooker. Cook on low 6-8 hours or high 4-5 hours.
Make it Spicy: Add a pinch of cayenne pepper or a chopped jalapeño with the vegetables.
Extra Flavor: A splash of dry white wine or Worcestershire sauce can add depth.
