  • 1 lb grassfed ground beef
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 2 large carrots, peeled and chopped
  • 2 stalks of celery, chopped
  • 1 cup of sliced mushrooms
  • 1 cup of beef broth
  • 1 can of diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • 8 oz of dried pasta, such as ziti or penne
  • 2 tbsp olive oil
  • 1 cup of grated mozzarella cheese


  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and cook until softened and translucent, about 5 minutes.
  3. Add the garlic, carrots, and celery to the skillet and cook for another 5 minutes, until the vegetables are tender.
  4. Add the grassfed ground beef to the skillet and cook until browned, about 10 minutes. Drain any excess fat.
  5. Add the mushrooms, beef broth, diced tomatoes, tomato paste, thyme, rosemary, basil, salt, and pepper to the skillet. Stir to combine.
  6. Cook the pasta in a large pot of boiling salted water until al dente, about 8-10 minutes. Drain and set aside.
  7. Mix the cooked pasta with the beef mixture in the skillet.
  8. Transfer the mixture to a 9×13 inch baking dish and sprinkle the mozzarella cheese on top.
  9. Cover the dish with foil and bake for 30 minutes.
  10. Remove the foil and bake for an additional 15-20 minutes, until the cheese is melted and bubbly.
