Here’s my delicious and easy recipe for Chicken Orzo Soup:
Ingredients:
– 2 tablespoons olive oil
– 1 large onion, diced
– 3 carrots, chopped
– 3 celery stalks, chopped
– 3 garlic cloves, minced
– 1 1/2 pounds pulled and/or diced chicken
– 8 cups chicken broth
– 1 cup uncooked orzo pasta
– 2 teaspoons dried Italian seasoning
– 1 lemon, juiced
– 2 tablespoons fresh parsley, chopped
– Salt and pepper to taste
Instructions:
1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté for 5 minutes until vegetables start to soften.
2. Add garlic and cook for another minute until fragrant.
3. Add diced chicken and cook for 5-7 minutes until it starts to brown.
4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
5. Add orzo pasta and Italian seasoning. Simmer for another 10 minutes or until orzo is tender.
6. Stir in lemon juice and parsley. Season with salt and pepper to taste
7. Serve hot, garnished with additional parsley if desired
