Six weeks ago, I began a journey that has truly transformed the way I approach food and nutrition. My inspiration came partly from Dark Calories by Dr. Cate Shanahan, a powerful book that challenges long-held beliefs about industrial vegetable oils and the broader food system. It opened my eyes to the damaging effects of the “Hateful Eight” oils—such as canola, corn, and soybean oil—which are present in most processed foods. These oils, according to Shanahan, deplete our bodies of antioxidants, promote inflammation, and contribute to chronic diseases like heart disease and obesity.

The author advocated for a return to natural, whole foods—fats that our ancestors thrived on, such as butter, lard, and olive oil. This shift in perspective inspired me to take control of my health, and I knew that the keto diet, with its focus on healthy fats and minimal carbohydrates, was the right path for me.

Since starting keto six weeks ago, the changes have been remarkable. In addition to easily dropping 15 lbs I’ve

noticed improved mental clarity, more stable energy levels, and a deeper sense of well-being. One of the most surprising aspects has been how this diet has shifted my cravings—now, I naturally seek nutrient-dense foods and feel more satisfied with smaller portions. This aligns with Shanahan’s insights on how removing harmful oils and sugars from our diets can help us regain control over our appetites and metabolic health.

The keto diet, which is high in healthy fats like grass-fed beef, pasture-raised eggs, and butter, has become my blueprint for wellness. It’s not just about weight loss or counting carbs—it’s about fueling my body with the nutrients it truly needs, free from the toxic effects of processed oils and sugars.
