Taco Tuesday Just Got Better with this Grassfed Beef Mac and Cheese Recipe

Ingredients:

  • 1 pound grassfed ground beef
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of taco seasoning
  • 1 cup of macaroni
  • 4 cups of milk
  • 4 tablespoons of unsalted butter
  • 4 tablespoons of all-purpose flour
  • 2 cups of shredded cheddar cheese
  • 1 cup of shredded pepper jack cheese
  • Salt and pepper to taste

Optional toppings: chopped cilantro, diced tomatoes, sliced jalapenos, sour cream

Instructions:

  1. Cook the macaroni according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, cook the ground beef over medium heat until browned, about 7 to 8 minutes. Drain any excess fat and transfer the beef to a plate.
  3. In the same skillet, add the onion and garlic and cook until softened, about 5 minutes. Return the beef to the skillet and stir in the taco seasoning. Cook for 2 to 3 minutes, or until fragrant.
  4. In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook until lightly golden, about 2 minutes. Gradually whisk in the milk and cook, stirring constantly, until the mixture thickens, about 5 to 7 minutes.
  5. Remove the saucepan from heat and stir in the cheddar cheese and pepper jack cheese until melted and smooth. Season with salt and pepper to taste.
  6. Combine the cooked macaroni, beef mixture, and cheese sauce in a large pot and stir to combine.

Serve hot and topped with your favorite taco toppings, such as chopped cilantro, diced tomatoes, sliced jalapenos, or sour cream. Enjoy!
