Thai Peanut Pork

Ingredients:

  • Cooking spray
  • 2 red bell peppers, deseeded and cut into strips
  • 4 (8-ounce) boneless pork loin chops
  • 1/2 cup teriyaki sauce
  • 2 tablespoons rice vinegar
  • 2 garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • 1/4 cup smooth peanut butter
  • 1/2 cup chopped green onions
  • 1/4 cup chopped roasted peanuts
  • 2 limes, sliced into wedges

Instructions:

  1. Lightly grease the inside of a slow cooker with cooking spray.
  2. Add the red bell pepper strips and pork loin chops to the slow cooker.
  3. In a small bowl, combine teriyaki sauce, rice vinegar, minced garlic, and red pepper flakes. Pour the mixture over the pork chops in the slow cooker.
  4. Cover the slow cooker and cook on low heat until the pork is extremely tender, about 8 to 9 hours.
  5. Once cooked, carefully remove the pork from the slow cooker. Stir in the smooth peanut butter until fully incorporated and the sauce is smooth.
  6. Return the pork to the slow cooker and cook for an additional 10 minutes.
  7. Transfer the pork and sauce to a serving dish. Garnish with chopped green onions and roasted peanuts.
  8. Arrange lime wedges around the dish for an added burst of flavor when serving. Enjoy your delicious Thai-style peanut pork!
